Vegan Oreo Brownies

Quarantine makes a lady do crazy things, like make vegan brownies. They're pretty good.

This recipe is another one from the tasty app, which I have altered. The original recipe is here: https://tasty.co/recipe/the-best-ever-vegan-brownies. I have tweaked the cooking method to make it a one bowl deal, and edited the recipe to have a stronger chocolate element and Oreo punctuation.


Vegan Oreo Brownies


Ingredients:

200g vegan chocolate

I used a 100g bar each of milk and dark chocolate

115g vegan butter

2 Tbsp ground flaxseed

6 Tbsp warm water

1 cup granulated sugar

2 tsp vanilla extract

3/4 cup/90g plain flour

1/2 cup/50g cocoa powder

1/2 tsp salt

1 tsp baking powder

12 crushed Oreos


Instructions:

Preheat the oven to 350˚F/180˚C

Line an 8 x 8 baking dish with baking paper, like so:

Chop the chocolate bars into chunks, and put 110-115g chopped chocolate and the vegan butter into a bowl on top of a pan of simmering water, a double boiler situation. Once melted let cook for a little while.

Use a bigger bowl for this, and this turns into a much easier clean up.

While the chocolate and butter are melting, mix the ground flaxseed and the water and let sit for 8-10 minutes

I accidentally bought whole flaxseeds, but I could easily grind them in a nutri-bullet. Any similar blender will do the job if you make the same oversight.

Using a plastic bag and a pint glass or any heavy bottomed glass and a plastic bag, roughly crush the Oreos.

When the chocolate and butter have melted, remove from heat and mix in the sugar, vanilla extract and flaxseed mix.

Sift in the flour, cocoa powder, salt and baking powder, and mix gently.

Mix in the remaining chopped chocolate and crushed Oreos.

Pour the batter into the prepared pan and bake 25-30 minutes, until a toothpick inserted into the centre comes out clean(ish).

Let cool for at least 20 minutes on a cooling rack before slicing
