Triple Chocolate Orange Brownies

A classic flavour combo...

This recipe differs slightly from my usual go-to brownie recipe in that it requires a bit more work and produces a brownie with a texture that is more cakey than fudgy. These brownies are a little bit lighter, but still have that intense chocolate flavour. This recipe makes 24 generously sized brownies.


Ingredients:

125g unsalted butter

250g plain chocolate

1 Tbsp very strong espresso

1/2 tsp orange extract

200g (1 cup) light brown sugar

3 eggs

2 tsp grated orange rind

120g (1 cup) plain flour

35g (1/3 cup) cocoa powder

100g (1 cup) plain chocolate chips

100g (1 cup) milk chocolate chips

100g (1 cup) white chocolate chips


Instructions:

Preheat the oven to 350˚F/180˚C.

Line an 8 x 11 baking sheet with parchment paper.

In a double boiler, melt the butter and the 250g plain chocolate, mix in the espresso and orange extract and let cool to room temperature.

Fold in the melted chocolate and butter mixture.

Sift in the flour and cocoa powder, and gently mix in.

Mix in the plain, milk and white chocolate chips.

Spread into the prepared pan and bake for c.40 minutes, until set with a crispy top.

Let cool on a cooling rack before lifting out and cutting into brownies.

These ones do not cling to a knife as much as the others, and it is easy to get clean cut lines.
