When life gives you lemons... (or when you overestimate how much hot water with lemon and honey you'll want to drink and suddenly have 8 lemons about to go bad)

Lemon Bars
This recipe comes from the cookbook The Joy of Cooking Christmas Cookies. I do not know what's Christmassy about them. I haven't made this recipe in years, and this time, something extremely weird happened. I did not take too many pictures, because these are not very photogenic. And I didn't care enough.
Ingredients:
Crust:
1 1/2 cups plain flour
1/2 cup icing sugar
170g butter, melted
Filling:
6 eggs
3 cups sugar, granulated or caster
zest of one lemon
1 cup + 2 Tbsp lemon juice
1/2 cup plain flour
Instructions:
Preheat oven to 165˚C
Mix melted butter, flour and sugar, and press into a pan
Bake for c.25 minutes until golden brown and let cool completely
Filling:
Reduce oven temperature to 150˚C
Whisk ingredients together until smooth, pour over crust and bake c.35 minutes until set
Let cool completely


The odd story: When I took the bars out of the oven, I noticed the top was hard, this seemed odd because topping was supposed to be a lemon curd. When I cut into them, the curd appeared to have seeped down and pushed the base to the top, leaving a small layer of lemon juice at the top, which crisped up. They inverted just fine, just, upside down. That was not supposed to happen, and I have no explanation.
