It's vegan. This was not intentional.

Blood Orange Chocolate Olive Oil Cake
I downloaded an app called Tasty. It's mostly food videos, and every now and again I make something from it. This is one of those things. I thought it looked kinda cool, then I found blood oranges at the skeevy produce shop that I'm pretty sure is camafloucging (that is not the spelling I expected) something more nefarious. I changed the recipe a little bit.
Ingredients:
Cake:
5 blood oranges
1/2 cup olive oil
1 1/2 cups plain flour
2/3 cup cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
1 1/4 cups sugar
1 cup water
1 1/2 tsp white vinegar
Glaze:
1 cup icing sugar
3 Tbsp blood orange juice
Instructions
Zest 3 oranges and combine zest with the 1/2 cup olive oil. Leave to infuse c. 45 minutes.
Juice the oranges so that you have 1/2 cups for the cake and 3 Tbsp for the glaze.
Preheat the oven to 350˚F/180˚C
Oil and flour a 9" cake pan, or use a silicon one so you don't have to do that
In a large bowl, sift together the flour, cocoa powder, baking soda and salt and combine
Add sugar, infused oil with zest, the 1/2 cup orange juice, water and white vinegar and whisk until the batter is smooth with no lumps
It's pretty straightforward...
Pour batter into pan and bake 35-40 minutes until it passes the clean knife test
It goes from A to B
While the cake bakes, cut the remaining two oranges into segments for decorating and leave slices on a paper towel to drain
You may need two sets of paper towels
Let cakes cool in pan for c.20 minutes, then turn out to cool completely
While it is not immediately evident, this cake broke when I turned it out. I shoved it back together and hoped for the best.

Make the glaze by mixing the 3 Tbsp of blood orange juice with the icing sugar until thick
Pour glaze over cooled cake
I'm sure I could have done this in a less messy more professional way. I did not.
Decorate however the hell you want with the cut oranges

Apparently you'd never know it was vegan!
