Baileys Chocolate Chocolate Chip Cookies

It's exactly what it sounds like


Baileys Chocolate Chocolate Chip Cookies

This is another one from the Tasty app. I've changed the chocolate chip ratios and quantities. These are good. The recipe says it makes 9 cookies, this is a ridiculous underestimate, I got about 65 small cookies.


Ingredients

1 cup (225g) butter, softened

1 1/2 cups granulated sugar

2 eggs

1 tsp vanilla extract

8 Tbsp Baileys or imposter Irish cream

2 2/3 cups plain flour

1 tsp instant coffee powder

This must be very fine, instant espresso powder is also fine

1 1/4 tsp baking soda

Sprinkle of salt

1 x 80-100g bag each of white, milk and dark chocolate chips


Instructions:

Cream together butter, sugar and eggs until fluffy

Beat in the Baileys (or the imposter)

Add flour, cocoa powder, instant coffee and baking soda and mix until combined

Stir in chocolate chips

Refrigerate 2-3 hours

The app says to refrigerate 4-6 hours. This is excessive


Preheat oven to 350˚F/180˚C

Roll dough into 1-1.5 inch balls and set on a baking sheet

Bake 10-11 minutes, and cool on a rack

I use the inside rack of my grill pan as a cooling rack (second image). It works just fine


I find these are best enjoyed in quantities of four or more. They're not very big.


Maybe the app meant that the serving size is 9 cookies? Because that's the norm for these.
